Breakfast on the Go!

On Monday, November 18th, I met with Sean Kelly and Orlena Cain, local radio announcers on Mix97 Quinte’s Best Variety.  Orlena had called me the previous week, after a brief meeting at Revitalize & Energize, and asked me to come into the studio to discuss healthy breakfast options for people on the go during the cold winter months.  I usually shy away from such things, as I run my business quietly and modestly, and get new customers by word of mouth.  Well, there is no bigger mouth than radio, and it was time to step outside my comfort zone, so I said yes.

I made three breakfast selections – a superfood smoothie, creamy rice porridge, and overnight oats.  I think Orlena and the crew were most taken with the Apple cinnamon overnight oats and Almond butter chocolate overnight oats from  Melissa has a great vegan recipe blog that I use a lot.  (I must remember to add her blog to my links page.)  The creamy porridge is a real hit with my kids and the Superfood smoothie is enjoyed by many of my clients.   Here is the porridge recipe:

Creamy Rice Porridge

2 cups leftover cooked short grain brown rice

1 cup nut milk

1 tsp. pure vanilla extract

applesauce, granola, cinnamon

Cook porridge over medium heat, stirring often until it reaches a consistency you like.  Divide into bowls, top with a couple spoonfuls applesauce, a sprinkle of cinnamon, and a tablespoon of Primal Crunch granola. Enjoy! (Side note, you don’t need to make your own Primal Crunch granola, you can buy it at many local retailers, including Off the Hook  and Lolly Lodge in Trenton, Campbell’s Orchard in Rednersville, Sunflower Health Shop & Services in Brighton, and Revitalize & Energize in Belleville. WARNING: It is very addictive!)
